Southern Pizza




I finally got around to having my friend Morgan over for dinner. Pasta doesn't count. I made a recipe from the magazine Southern Living. It was easy and turned out really well. If I didn't mess if up then I think anyone could figure it out. I'll make this again as a finger food when I have a party.

Here is the recipe: (slightly changed from SL's)
Serves 4. Takes about 45 mins.
-1 small plum tomato (I would use 2 next time)
-1 pkg Pilsbury pizza crust (might try another kind next time)
-1/3 cup pesto (use your own recipe)
-fresh corn kernels from 1 ear corn (I used sweet corn)
-1/4 cup parmesean cheese
-8 oz. sliced mozzarella
-fresh basil leaves
-salt
-pepper (freshly ground makes a big difference)
1. Preheat oven to 450. Place tomato slices on papertowel and sprinkle with salt and pepper. Let sit.
2. Place pizza crust on greased baking sheet; spread with pesto. Top pizza with corn, tomato, mozzarella, and parmesean
3. Bake at 450 for 14 mins. Top with basil leaves and pepper.
